🥩 Grilled Ranch-Style Skirt Steak with Fire-Roasted Peppers 🌶️

Ingredients:
1–1.5 lbs Osterfeld Ranches skirt steak
2 tbsp olive oil
3 cloves garlic, minced
Juice of 1 lime
1 tsp cumin
1 tsp smoked paprika
1 tsp oregano
1 tsp coarse salt
½ tsp black pepper
Fresh tomatoes & peppers for grilling

Directions:
In a bowl, whisk olive oil, garlic, lime juice, and spices into a quick marinade.
Coat skirt steak and let it rest for at least 30 minutes (or overnight in the fridge for deeper flavor).
Heat grill or cast-iron skillet to high heat.
Grill steak 3–4 minutes per side for medium-rare (or adjust to your liking).
Toss peppers and tomato halves on the grill until charred.
Slice steak thinly against the grain and sprinkle with coarse salt.
Serve hot with roasted veggies on the side — perfect for tacos, rice bowls, or just as-is.
